Soft cinnamon and brown sugar cookie.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Gradually add the dry mixture to the wet mixture, mixing until just combined. Do not overmix.
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden. The centers will look soft, and that’s okay.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
