1. Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and garlic powder. Set aside.
2. Coat the Chicken
In a shallow bowl, beat the eggs. In another bowl, combine the bread crumbs and grated parmesan cheese. Dip each chicken breast into the egg, then coat with the breadcrumb mixture.
3. Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Transfer to a baking dish.
4. Prepare the Marinara
In the same skillet, add crushed tomatoes and simmer for about 10 minutes. Season with salt and pepper to taste.
5. Assemble the Dish
Cook the penne noodles according to package instructions. Drain and mix with the marinara sauce. Spread the noodle mixture in the bottom of the baking dish, then place the fried chicken on top.
6. Add Cheese and Bake
Sprinkle shredded mozzarella cheese over the chicken. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
