Instructions
1. Cook the Penne Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
2. Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the sliced mushrooms and cook for 3-4 minutes until they are tender.
3. Add Tomatoes and Spinach
Stir in the diced Roma tomatoes and fresh spinach. Cook for another 2-3 minutes until the spinach wilts.
4. Make the Sauce
Pour in the heavy cream and tomato sauce. Add the red pepper flakes, salt, and black pepper. Stir well and let simmer for about 5 minutes, allowing the sauce to thicken slightly.
5. Combine Pasta and Sauce
Add the cooked penne pasta to the skillet and toss to combine everything evenly. Cook for an additional 2 minutes to heat through.
6. Serve
Serve hot, topped with your choice of grated Parmesan cheese or crumbled feta cheese.
