Prepare the Filling
In a large bowl, mix together the ground chicken, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until well combined.

Fill the Wrappers
Take a potsticker wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with a bit of water, fold the wrapper in half, and pinch to seal. Repeat with the remaining wrappers and filling.

Cook the Potstickers
Heat vegetable oil in a large skillet over medium heat. Place the potstickers in the skillet and cook for about 2-3 minutes, or until the bottoms are golden brown.

Steam the Potstickers
Add 1/4 cup of water to the skillet and cover immediately. Allow the potstickers to steam for about 5-7 minutes until the water evaporates and the potstickers are cooked through.

Serve
Remove the lid and let the potstickers cook for another minute to crisp up the bottoms. Serve hot with soy dipping sauce.
