Prepare the Noodles
Cook the rice noodles according to the package instructions until al dente. Drain and set aside.

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the shrimp and cook until pink and cooked through, about 3-4 minutes. Remove and set aside.

Scramble the Eggs
In the same skillet, add another tablespoon of vegetable oil. Whisk the eggs and pour them into the skillet, scrambling until fully cooked. Remove and set aside.

Combine Ingredients
Add the cooked noodles, shrimp, scrambled eggs, lime juice, soy sauce, fish sauce, and sugar to the skillet. Toss everything together until well mixed and heated through.

Serve
Garnish the Pad Thai with crushed peanuts, chopped green onions, and cilantro before serving.
