Prepare the Filling
In a bowl, combine the ground chicken, green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until all ingredients are thoroughly combined.

Fill the Wontons
Place a wonton wrapper on a flat surface. Spoon about 1 tablespoon of the chicken mixture onto the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a triangle, and pinch the edges to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
In a large skillet, heat the vegetable oil over medium heat. Add the potstickers in a single layer and cook for about 2-3 minutes or until the bottoms are golden brown.

Steam the Potstickers
Carefully add 1 cup of water to the skillet and cover immediately with a lid. Allow the potstickers to steam for about 5-7 minutes until the water has evaporated and the chicken is cooked through.
