Preparation

    Soak the Noodles

    Place the rice noodles in a large bowl and cover them with hot water. Let them soak for about 20-30 minutes until they are softened, then drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, and lime juice until well combined. Set aside.

    Chop the Vegetables

    Finely chop the green onions, julienne the carrots, and mince the garlic cloves. Set aside.

Cooking

    Cook the Protein

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the shrimp or chicken and cook until fully cooked through, about 5-7 minutes. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add a bit more oil if necessary. Crack the eggs into the skillet and scramble until fully cooked. Remove and set aside with the protein.

    Stir-fry the Vegetables

    Add the minced garlic, carrots, and green onions to the skillet. Stir-fry for about 2-3 minutes until the vegetables are tender.

    Combine Ingredients

    Add the soaked rice noodles and prepared sauce to the skillet. Toss everything together and cook for an additional 2-3 minutes until heated through.

    Finish with Protein and Veggies

    Return the cooked shrimp or chicken and scrambled eggs to the skillet. Add the bean sprouts and toss everything well to combine. Cook for another minute.

Serving

    Serve

    Plate the Pad Thai and garnish with crushed peanuts, fresh cilantro, and lime wedges. Serve immediately.
