Ice Cream Filling
Method
Preparing the Mochi Dough
- 1
Mix Dry Ingredients
In a large mixing bowl, combine sweet rice flour and granulated sugar. Stir until well mixed.
- 2
Add Water
Gradually add the water to the dry ingredients while stirring continuously to avoid lumps. The mixture should be smooth.
- 3
Steam the Mixture
Transfer the mixture to a heatproof dish and cover with plastic wrap. Steam for about 20 minutes until the dough becomes sticky and translucent.
- 4
Cool the Dough
Once steamed, remove from heat and let the mochi dough cool for about 10 minutes.
Assembling Mochi Ice Cream
- 5
Prepare Work Surface
Dust a clean surface with cornstarch to prevent sticking.
- 6
Flatten the Mochi Dough
Once the dough is cool enough to handle, divide it into equal portions (about 2-3 tablespoons each) and flatten each portion into a circle about 1/4 inch thick.
- 7
Add Ice Cream
Place a small scoop of your chosen ice cream in the center of each mochi circle.
- 8
Wrap the Ice Cream
Carefully fold the edges of the mochi circle over the ice cream, pinching to seal completely. Make sure no ice cream is exposed.
- 9
Freeze Mochi Ice Cream
Place the finished mochi ice cream balls on a tray lined with parchment paper and freeze for at least 2 hours, or until firm.
