Preparing the Broth

    Roasting the Bones

    Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast them for 30-40 minutes, turning halfway through, until they are browned.

    Simmering the Broth

    In a large pot, add the roasted beef bones, water, whole onion (peeled and halved), ginger (sliced), garlic cloves (smashed), star anise, soy sauce, salt, and black peppercorns. Bring to a boil, then reduce the heat to low and simmer for at least 2 hours, skimming any foam that rises to the surface.

    Straining the Broth

    After simmering, carefully strain the broth through a fine mesh sieve into another pot. Discard the solids and return the broth to the pot, keeping it warm on low heat.

Preparing the Soup

    Cooking the Rice Noodles

    In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions, usually about 4-6 minutes. Drain and set aside.

    Preparing the Beef

    While the noodles are cooking, thinly slice the beef sirloin against the grain. You can also lightly sear the beef slices in a pan for 1-2 minutes to enhance the flavor.

    Assembling the Soup

    In serving bowls, place a portion of the cooked rice noodles. Ladle the hot broth over the noodles, then top with sliced beef, green onions (sliced), cilantro (roughly chopped), and bean sprouts. Serve with lime wedges on the side.
