Muffin Ingredients

Method

Muffin Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. 3

    Prepare Wet Ingredients

In another bowl, mash the ripe bananas (if using) or combine the blueberries. Add eggs, milk, vegetable oil, and vanilla extract to the mashed bananas or blueberries and mix until well combined.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

  5. 5

    Fill Muffin Tin

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  6. 6

    Bake

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool and Serve

Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack. Serve warm or at room temperature.
