Prepare the Chicken
In a skillet over medium heat, add the olive oil. Season the chicken breasts with fajita seasoning and cook for about 6-7 minutes per side, or until fully cooked. Remove from skillet and let rest for a few minutes before slicing.

Assemble the Quesadillas
Place a tortilla in the skillet over low heat. On one half of the tortilla, layer sliced chicken, cheese, and any additional toppings you desire. Fold the tortilla over to create a half-moon shape. Cook for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.

Repeat with remaining tortillas and filling. Serve the quesadillas hot with shredded lettuce, diced tomatoes, and sour cream on the side. Accompany with rice and refried beans.
