1. Prepare the Beef
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in minced garlic and cook for another minute. Add the beef chuck roast and sear on all sides until browned.
2. Cook the Beef
Pour in the beef broth and add cumin, chili powder, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours until the beef is tender and shreds easily.
3. Shred the Beef
Remove the beef from the pot and let it cool slightly. Shred the beef using two forks and return it to the pot to mix with the juices.
4. Assemble the Burritos
Lay a tortilla flat and add a generous amount of the shredded beef mixture in the center. Top with a mixture of Cheddar and Monterrey Jack cheeses. Fold the sides of the tortilla over the filling and roll it up tightly.
5. Heat the Burritos
Preheat the oven to 350°F (175°C). Place the burritos seam side down in a baking dish. Sprinkle additional cheese on top and bake for 15-20 minutes until the cheese is melted and bubbly.
6. Serve
