1. Prepare the Prime Rib
Preheat your oven to 450°F (232°C). In a small bowl, mix olive oil, chopped fresh rosemary, minced garlic, salt, and black pepper. Rub this mixture all over the prime rib.
2. Roast the Prime Rib
Place the prime rib on a rack in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1 hour, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let it rest for at least 15 minutes.
3. Make the Au Jus
While the prime rib is resting, pour the beef stock into the roasting pan to deglaze. Scrape up any browned bits from the pan and simmer on the stove for about 5 minutes.
4. Prepare the Horseradish Cream
In a small bowl, mix together horseradish and sour cream. Adjust seasoning to taste.
5. Make Garlic Mashed Potatoes
Peel and chop the potatoes, then boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Stir in minced garlic and season with salt and pepper to taste.
6. Serve
Slice the prime rib and serve with au jus, horseradish cream, and garlic mashed potatoes.
