Hawaiian Plate Preparation Directions

1

Prepare the Pork Lau Lau

1. Preheat your steamer. Season the pork shoulder with sea salt and wrap it in ti leaves. Place it in the steamer and steam for about 4-6 hours until tender.

2

Prepare the Kalua Pig

2. Rub the pork shoulder with liquid smoke, wrap it in aluminum foil, and bake in a preheated oven at 300°F for 4-6 hours until it is tender and pulls apart easily.

3

Make Lomi Lomi Salmon

3. In a bowl, combine diced fresh salmon, tomatoes, and chopped green onions. Mix well and refrigerate for about 30 minutes to let the flavors meld.

4

Prepare the Poi

4. If using fresh taro root, steam and mash it, then add water to achieve a smooth consistency. If using store-bought poi, simply stir to smooth it out.

5

Cook the Rice

5. Cook the white or brown rice according to package instructions.

6

Assemble the Plate

6. Serve the Pork Lau Lau, Kalua Pig, Lomi Lomi Salmon, and Poi alongside a portion of rice on a large plate.
