Preparation
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
Make the Batter
In a large bowl, mix together the flour, cornstarch, salt, black pepper, paprika, and garlic powder. In a separate bowl, pour the buttermilk.
Coat the Calamari
Dip each calamari ring first into the buttermilk, allowing excess to drip off, then coat it in the flour mixture. Shake off any excess flour.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).
Fry the Calamari
Fry the coated calamari in batches for about 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Serve
Serve the fried calamari hot with cocktail sauce and lemon wedges on the side.
