Prepare the Falafel Mixture
In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, flour, salt, and black pepper. Pulse until the mixture is combined but still slightly chunky. Transfer to a bowl and refrigerate for at least 30 minutes.

Form the Falafel
Once chilled, form the mixture into small balls or patties, about the size of a golf ball.

Fry the Falafel
Heat vegetable oil in a deep skillet over medium heat. Carefully add the falafel balls to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich
Place the fried falafel in pita bread or your choice of sandwich bread. Top with your favorite toppings such as lettuce, tomatoes, cucumbers, and tahini sauce.
