Prepare the Lentils
Rinse the brown lentils under cold water, then place them in a pot with 2 cups of water. Bring to a boil, reduce heat, and simmer for about 15-20 minutes until tender. Drain and set aside.
Cook the Rice
In a separate pot, rinse the basmati rice under cold water until the water runs clear. Add the rice to a pot with 1 cup of water, 1 tsp of salt, and bring to a boil. Once boiling, reduce heat, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit covered.
Caramelize the Onions
Slice the onions thinly. In a large skillet, heat the olive oil over medium heat. Add the onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.
Combine Ingredients
In a large bowl, combine the cooked lentils, rice, and caramelized onions. Stir in minced garlic, cumin, black pepper, and adjust salt to taste. Mix well.
Serve
Serve warm as a main dish or side. Enjoy your Mjadarah!
