Prepare the Ingredients

Rinse the lentils under cold water until the water runs clear. Chop the onions thinly.

Caramelize the Onions

In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 15-20 minutes, stirring occasionally, until they are a deep golden brown. Remove half of the caramelized onions and set aside for garnish.

Cook the Lentils

In a pot, combine the lentils and 2 cups of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until the lentils are tender but not mushy.

Cook the Rice

In the same pot used for lentils, add the rinsed rice, the remaining 2 cups of water, and sea salt. Bring to a boil, then cover and reduce the heat to low. Cook for about 15 minutes or until the rice is tender and the water is absorbed.

Combine and Serve

Once the rice and lentils are cooked, gently mix them together in the pot. Serve warm, garnished with the reserved caramelized onions.
