    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Spinach and Tomato

    Stir in the fresh spinach and diced tomato. Cook until the spinach wilts and the tomatoes soften, about 3-4 minutes.

    Season the Mixture

    Remove from heat, then add lemon juice, salt, and black pepper. Mix well and let it cool.

    Prepare the Pastry

    Preheat your oven to 375°F (190°C). Roll out the pastry dough on a floured surface and cut into circles of about 4 inches in diameter.

    Fill and Fold the Fatayer

    Place a tablespoon of the spinach and tomato filling in the center of each pastry circle. Fold the dough over to form a triangle and press the edges to seal.

    Bake the Fatayer

    Place the fatayer on a baking sheet lined with parchment paper. Brush with olive oil and sprinkle sesame seeds on top. Bake for 20-25 minutes or until golden brown.
