Prepare the Filling
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Cook the Spinach
Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Mix the Filling
In a mixing bowl, combine the cooked spinach mixture with crumbled feta cheese, black pepper, and salt to taste. Mix well until evenly combined.

Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into a rectangle, about 10x6 inches.

Egg Wash and Bake
Brush the tops of the filled pastries with the beaten egg to give them a golden color when baked. Place the pastries on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes or until golden brown and puffed. Remove from the oven and let cool slightly before serving.
