    Prepare the Rice Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the rice and cook for a few minutes, then add the chopped tomato, parsley, mint, lemon juice, salt, black pepper, and allspice. Mix well and add 1 cup of vegetable broth. Cook until the rice is partially cooked, about 10 minutes. Remove from heat and let cool.

    Prepare the Grape Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for about 2 minutes until softened. Drain and cool.

    Stuff the Grape Leaves

    Lay a grape leaf on a flat surface, vein side up. Place a tablespoon of the rice filling near the stem end of the leaf. Fold the sides of the leaf over the filling and then roll it tightly from the stem end to the tip. Repeat with remaining leaves and filling.

    Cook the Stuffed Grape Leaves

    Place the stuffed grape leaves seam side down in a large pot. Add the remaining vegetable broth and drizzle with the remaining olive oil. Cover the pot and simmer on low heat for about 30-40 minutes until the leaves are tender and the rice is fully cooked. Let them cool slightly before serving.
