    Marinate the Salmon

    In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Cut the salmon into 1-inch cubes and add to the marinade. Toss to coat. Cover and refrigerate for at least 30 minutes.

    Prepare the Skewers

    While the salmon is marinating, soak wooden skewers in water for about 15 minutes to prevent burning. If using metal skewers, skip this step.

    Assemble the Kabobs

    Thread the marinated salmon cubes onto the skewers, alternating with chunks of bell pepper and red onion.

    Cook the Kabobs

    Preheat a grill or grill pan over medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork.

    Fried Potatoes

    While the kabobs are cooking, peel and cut potatoes into wedges. Heat oil in a frying pan over medium heat, add the potato wedges, and fry until golden brown and crispy, about 15-20 minutes. Season with salt to taste.

    Serve

    Remove the kabobs from the grill and let them rest for a few minutes. Serve warm with the fried potatoes on the side.
