Prepare the Syrup
In a saucepan, combine sugar, water, honey, ground cinnamon, and vanilla extract. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool.

Prepare the Phyllo Dough
Preheat your oven to 350°F (175°C). Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Grease a 9x13 inch baking dish with melted butter.

Layer the Baklava
Layer 8 sheets of phyllo dough in the bottom of the prepared dish, brushing each layer with melted butter. After 8 layers, sprinkle 1/3 of the chopped pistachios on top. Repeat this process, layering 8 more sheets of phyllo, brushing with butter, and adding pistachios until all pistachios are used, finishing with 8 more layers of phyllo on top.

Cut and Bake
Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for 45-50 minutes, until golden brown and crisp.

Add the Syrup
Once the baklava is baked, remove it from the oven and immediately pour the cooled syrup over it, ensuring that it seeps into the cuts. Let it rest for at least 4 hours or overnight for the best flavor.
