    Prepare the Chicken

    In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the chicken pieces and brown them on all sides.

    Add Spices and Water

    Add cardamom pods, cinnamon stick, salt, and black pepper to the pot. Pour in 4 cups of water, bring to a boil, then reduce heat and let simmer for about 30-40 minutes until the chicken is fully cooked.

    Cook the Vegetables

    Once the chicken is done, remove it from the pot and set aside. In the same pot, add sliced carrots and cauliflower florets into the broth and cook for about 10 minutes.

    Prepare the Rice

    Add the rice to the pot with vegetables, stir well, and place the chicken back on top. Cover the pot and let it cook on low heat for about 20-25 minutes, or until the rice is fully cooked and has absorbed the liquid.

    Serve

    Once cooked, flip the pot upside down onto a large serving platter to reveal the chicken and rice. Garnish with fresh parsley before serving.
