Prepare the Cracked Wheat
Rinse the cracked wheat under cold water, then soak it in 2 cups of warm water for about 30 minutes until it absorbs the water and becomes tender. Drain any excess water and set aside.

Cook the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the ground beef, breaking it apart with a spatula. Cook until browned. Stir in the pine nuts, ground cinnamon, ground cumin, salt, and black pepper. Cook for another 5 minutes, then remove from heat and let cool.

Combine Ingredients
In a large bowl, combine the soaked cracked wheat and the cooked beef mixture. Mix well until all ingredients are incorporated.

Layer the Kibbeh
Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil. Press half of the kibbeh mixture into the bottom of the dish to form an even layer. Spread the filling mixture over the base layer, then press the remaining kibbeh mixture on top to create a final layer. Use a sharp knife to score the top for easy serving.

Bake
Drizzle the remaining olive oil over the top and bake in the preheated oven for about 30-35 minutes, or until the top is golden brown.

Serve
Allow the kibbeh to cool for a few minutes before cutting into squares. Serve hot or cold, as desired.
