    Prepare the Filling

    In a large bowl, combine the long-grain rice, diced tomatoes, minced garlic, finely chopped onions, salt, black pepper, allspice, cinnamon, parsley, and mint. Mix until well combined.

    Prepare the Grape Leaves

    If using preserved grape leaves, rinse them in cold water to remove excess brine. If using fresh grape leaves, blanch them in boiling water for 1-2 minutes until softened. Drain and cool.

    Roll the Grape Leaves

    Lay a grape leaf on a flat surface, vein side up. Place a tablespoon of filling at the base of the leaf. Fold the sides over the filling and roll tightly from the bottom to the top. Repeat with remaining leaves and filling.

    Cook the Grape Leaves

    In a large pot, layer any leftover grape leaves on the bottom. Arrange the rolled grape leaves in the pot, seam side down. Drizzle with olive oil and lemon juice. Pour enough water to cover the rolls. Place a plate on top to keep them submerged.

    Simmer

    Cover and simmer on low heat for about 45 minutes to 1 hour, or until the rice is cooked and the grape leaves are tender.

    Serve

    Allow to cool slightly. Serve hot or cold, drizzled with additional olive oil and lemon juice if desired.
