Prepare the Pumpkin Falafel
In a food processor, combine the canned pumpkin, chickpeas, parsley, garlic, cumin, coriander, flour, baking powder, salt, and pepper. Blend until smooth but still slightly chunky. If the mixture is too wet, add a little more flour until it holds together.

Form the Falafel
Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

Fry the Falafel
Heat vegetable oil in a deep skillet over medium heat. Carefully add the falafel balls and fry until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Pita Sandwich
Warm the pita bread in a skillet or microwave. Stuff each pita with 2-3 falafel, a handful of spicy cabbage slaw, and drizzle with spicy tahini sauce.
