    In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Process until a coarse mixture forms. Do not over-process; you want some texture.

    Chill the Mixture

    Transfer the mixture to a bowl, cover, and refrigerate for at least 1 hour to allow flavors to meld and mixture to firm up.

    Form the Falafel Balls

    Once chilled, form the mixture into small balls or patties, about the size of a golf ball.

    Heat the Oil

    In a deep skillet or pot, heat oil over medium-high heat until hot.

    Fry the Falafel

    Carefully add falafel balls to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    Prepare the Lemon Tahini Dressing

    In a small bowl, whisk together tahini, lemon juice, and water until smooth. Adjust consistency with more water if needed.

    Serve the fried falafel topped with shredded lettuce, diced tomato, Lebanese pickles, and pickled turnips. Drizzle with lemon tahini dressing.
