Soak the Chickpeas
In a large bowl, soak the dried chickpeas in water overnight. Ensure they are fully submerged.

Prepare the Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Pulse until finely ground but not pureed.

Form the Falafel Balls
Transfer the mixture to a bowl and add flour. Mix well and form small balls or patties.

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until hot.

Fry the Falafel
Fry the falafel balls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Serve
Serve hot with tahini sauce and warm pita bread.
