Flatbread Dough Preparation

Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.

Mix Dough

In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Cook Beef

In a skillet over medium heat, add a little oil and sauté the chopped onion until translucent. Add ground beef and cook until browned. Season with allspice, salt, and black pepper.

Feta Spinach Topping Preparation

Sauté Spinach

In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add chopped spinach and cook until wilted. Remove from heat and mix in crumbled feta.

In a bowl, combine shredded mozzarella, shredded cheddar, and grated parmesan cheese. Set aside.

In a bowl, combine diced tomatoes, sliced black olives, olive oil, and salt. Mix well.

Mix Za'atar

In a small bowl, combine za'atar spice mix with olive oil to create a paste.

Assembly and Baking

Preheat Oven

Preheat your oven to a high temperature (around 475°F / 245°C) or use a fire hearth oven if available.

Shape Flatbreads

Once the dough has risen, punch it down and divide it into equal portions. Roll out each portion into a flat round shape.

Add Toppings

Place each flattened dough on a baking sheet or stone. Spread the prepared toppings over the flatbreads, leaving a small border around the edges.

Bake Flatbreads

Bake in the preheated oven for about 10-12 minutes, or until the flatbreads are golden and the toppings are bubbly.

Remove from the oven, allow to cool slightly, then cut into bite-sized wedges and serve warm.
