Preparing the Kibbeh Shell

Soak the Bulgur

In a bowl, soak the bulgur wheat in ice water for about 30 minutes until it absorbs the water and softens.

Mix Ingredients

In a large mixing bowl, combine the soaked bulgur, ground lamb or beef, chopped onion, ground cinnamon, allspice, salt, and black pepper. Mix thoroughly until well combined.

Knead the Mixture

Knead the mixture with your hands for about 5-10 minutes until it becomes a smooth dough-like consistency.

Cook the Filling

In a skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent.

Add Meat and Spices

Add the ground lamb or beef to the skillet and cook until browned. Stir in the pine nuts, ground cinnamon, salt, and black pepper. Cook for an additional 5 minutes until the pine nuts are toasted.

Cool the Filling

Remove the skillet from heat and allow the filling to cool down before using.

Assembling and Cooking Kibbeh

Shape the Kibbeh

Take a handful of the kibbeh shell mixture and flatten it in the palm of your hand. Create a small bowl shape and fill it with a spoonful of the meat filling. Seal the edges to form an oval shape.

Fry or Bake

Heat oil in a frying pan over medium heat. Fry the kibbeh on all sides until golden brown, or alternatively, you can bake them in a preheated oven at 180°C (350°F) for about 25-30 minutes.

Serve

Once cooked, remove from heat and let cool slightly before serving. Enjoy your homemade kibbeh!
