Kabob Preparation

Marinate the Chicken

In a bowl, combine olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, and black pepper. Cut the chicken breasts into 1-inch cubes and add them to the marinade. Allow to marinate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare the Vegetables

While the chicken is marinating, cut the bell peppers and red onion into 1-inch pieces.

Assemble the Kabobs

Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables.

Grill the Kabobs

Preheat a grill or grill pan to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.

Tzatziki Sauce Preparation

Make the Tzatziki

In a bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Stir until well combined and refrigerate until ready to serve.

Couscous Salad Preparation

Prepare the Couscous

In a saucepan, bring 1 cup of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

Combine the Salad Ingredients

In a large bowl, combine the cooked couscous, cherry tomatoes, diced cucumber, and chopped parsley.

Dress the Salad

Drizzle the olive oil and lemon juice over the salad, season with salt and black pepper, and toss gently to combine.
