Method
Crust Preparation
Mix Dry Ingredients
In a large mixing bowl, combine 1.5 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 0.25 teaspoons of salt. Mix well.
Add Butter
Cut 0.5 cups of unsalted butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Add Ice Water
Gradually add 3 tablespoons of ice water to the mixture, one tablespoon at a time, mixing until the dough holds together without being sticky.
Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Filling Preparation
Prepare Cream Cheese
In a mixing bowl, beat 8 ounces of cream cheese until smooth and creamy using an electric mixer.
Mix in Other Ingredients
Add 1 cup of sour cream, 0.75 cups of granulated sugar, 1 teaspoon of vanilla extract, 2 large eggs, and 2 tablespoons of lemon juice to the cream cheese. Mix until well combined and smooth.
Assembly and Baking
Preheat Oven
Preheat your oven to 350°F (175°C).
Roll Out Dough
On a lightly floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie pan.
Fit Dough into Pie Pan
Transfer the rolled-out dough to the pie pan, pressing it gently into the bottom and sides. Trim any excess dough hanging over the edges.
Add Filling
Pour the cream cheese filling into the prepared crust, spreading it evenly.
Bake the Pie
Bake the cheese pie in the preheated oven for 45-50 minutes or until the edges are set and the center is just slightly jiggly.
Cool and Serve
Remove the pie from the oven and let it cool to room temperature before slicing. Chill in the refrigerator for at least 2 hours before serving.
