Prepare the Broth
In a large pot, combine chicken broth, pork broth, sesame paste, soy sauce, and chili paste. Bring to a simmer over medium heat, stirring well until the sesame paste is fully incorporated.

Cook the Noodles
In a separate pot, bring water to a boil and cook ramen noodles according to package instructions. Once cooked, drain and set aside.

Blanch the Yu Choy
In the same pot of boiling water used for noodles, blanch the yu choy for about 2 minutes until tender. Remove and set aside.

Assemble the Bowl
In serving bowls, place a portion of cooked ramen noodles. Ladle the hot broth over the noodles. Top with chopped grilled pork, halved marinated eggs, blanched yu choy, chopped onions, and a sprinkle of sesame seeds.

Finish with a smear of chili paste on top and serve hot.
