A slice of grilled and marinated pork chashu, cabbage slaw, and crisp cucumber. Topped with eel sauce, kewpie mayo and served in a traditional Asian steamed bun (bao bun).

Prepare the Pork
In a bowl, mix soy sauce, mirin, sugar, salt, and pepper. Add the pork belly and marinate for at least 2 hours, preferably overnight.

Cook the Pork
Preheat the oven to 150°C (300°F). Place the marinated pork belly in a baking dish and cover with foil. Bake for 2-3 hours until tender. Remove from the oven and let it cool. Slice into thin pieces.

Steam the Bao Buns
Steam the bao buns according to package instructions until fluffy and heated through.
