    Prepare the Pork

    In a bowl, mix soy sauce, mirin, sugar, salt, and pepper. Add the pork belly and marinate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the oven to 150°C (300°F). Place the marinated pork belly in a baking dish and cover with foil. Bake for 2-3 hours until tender. Remove from the oven and let it cool. Slice into thin pieces.

    Prepare the Slaw

    Thinly slice the cabbage and cucumber. In a bowl, mix them together and season with salt and pepper.

    Steam the Bao Buns

    Steam the bao buns according to package instructions until fluffy and heated through.

    Assemble the Pork Buns

    In each steamed bao bun, place a few slices of pork, a generous amount of cabbage slaw, and cucumber. Drizzle with eel sauce and Kewpie mayo.
