Our famous bowl with a kick of spice. Rich pork base, garlic and chili oil. Comes with sliced grilled pork, marinated egg, yu choy, bamboo shoots and julienned onions. Choose your spice level: 1-Mild / 2-Medium (comes with chili paste) / 3-Fire (comes with chili paste and habanero paste in the broth)

    Prepare the Pork

    In a large pot, add the pork shoulder and cover with water. Bring to a boil and simmer for 1.5 to 2 hours until tender. Remove the pork, shred it, and set aside.

    Make the Broth

    In the same pot, add minced garlic, chili oil, soy sauce, and pork broth. Bring to a simmer and let it reduce slightly, about 20 minutes. For a medium spice level, add chili paste. For fire level, add habanero paste as well.

    Cook the Noodles

    In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

    Prepare the Toppings

    Blanch the yu choy in boiling water for 2 minutes. Prepare the marinated eggs by slicing them in half. Set all toppings aside.

    Assemble the Ramen

    In a bowl, place a serving of noodles, ladle the spicy broth over the noodles, top with shredded pork, yu choy, bamboo shoots, julienned onions, and marinated egg halves.

    Serve

    Garnish with additional chili oil if desired and serve hot.
