Prepare the Broth
In a large pot, add the pork belly and cover with water. Bring to a boil, then reduce to a simmer. Skim any foam that rises to the surface.

Add Flavor
Once the pork is tender (about 1.5 hours), add the red miso paste, minced garlic, and chopped onion to the pot. Stir until the miso has dissolved.

Cook the Noodles
In a separate pot, boil water and cook the ramen noodles according to package instructions. Drain and set aside.

Prepare Toppings
While the noodles are cooking, prepare the toppings: slice the grilled pork, and if using canned bamboo shoots and fish cakes, drain them.

Assemble the Ramen
In bowls, add a portion of cooked noodles, ladle the hot broth over the noodles, and top with sliced pork, sweet corn, fish cakes, bamboo shoots, bean sprouts, and fried onions.

Garnish and Serve
Sprinkle with chili powder and add a smear of chili paste on top. Serve hot.
