Prepare the Broth
In a large pot, combine chicken broth and pork broth. Bring to a simmer over medium heat.

Add Soy Sauce
Once the broth is simmering, add the shoyu (soy sauce) and stir well. Let it cook for an additional 5 minutes.

Cook Ramen Noodles
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

Prepare Vegetables
Blanch the yu choy in the broth for 2-3 minutes until tender. Remove and set aside.

Assemble the Ramen Bowl
In serving bowls, place a portion of cooked ramen noodles. Pour the hot broth over the noodles.

Add Toppings
Top with sliced grilled pork, yu choy, bamboo shoots, julienned onions, and a sheet of roasted seaweed. Drizzle with sesame oil and garnish with green onions.

Serve immediately while hot.
