    Prepare the Broth

    In a large pot, combine chicken broth and pork broth. Bring to a boil over medium heat, then reduce to a simmer.

    Season the Broth

    Add sea salt to the broth and stir to combine. Let it simmer for about 15 minutes to enhance the flavor.

    Cook Ramen Noodles

    In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

    Prepare Toppings

    While the broth simmers, quickly blanch the yu choy in boiling water for 1-2 minutes until tender. Drain and set aside.

    Assemble the Ramen

    In serving bowls, place a portion of ramen noodles. Ladle the hot broth over the noodles. Top with sliced grilled pork, yu choy, bamboo shoots, and julienned onions.

    Garnish and Serve

    Finish by adding a sheet of roasted seaweed on top of each bowl. Serve hot and enjoy your Shio Ramen!
