Prepare the Jalapeños
Slice the jalapeños in half lengthwise and remove the seeds and membranes to reduce heat.

Make the Filling
In a bowl, mix the kani (crab sticks) with the cream cheese until well combined.

Stuff the Jalapeños
Fill each jalapeño half with the kani and cream cheese mixture.

Prepare the Tempura Batter
In a separate bowl, combine the tempura batter mix with water to form a smooth batter.

Heat the Oil
In a deep pan, heat the oil over medium-high heat until it reaches 180°C (350°F).

Fry the Jalapeños
Dip each stuffed jalapeño into the tempura batter, then carefully place them in the hot oil. Fry until golden brown (about 3-4 minutes).

Drain and Serve
Remove the fried jalapeños from the oil and place them on paper towels to drain excess oil. Drizzle with spicy mayo and eel sauce before serving.
