Prepare the Filling
In a large bowl, combine the shredded cabbage, grated carrots, chopped mushrooms, and green onions. Add soy sauce, sesame oil, ground ginger, salt, and pepper. Mix well and set aside.

Fill the Wrappers
Take a spring roll wrapper and place about 2 tablespoons of the filling in the center. Fold the bottom of the wrapper up over the filling, then fold in the sides and roll tightly. Seal the top edge with a little water.

Heat the Oil
In a deep frying pan or wok, heat oil to 350°F (175°C). Make sure there is enough oil to fully submerge the spring rolls.

Fry the Harumaki
Carefully add the spring rolls to the hot oil in batches. Fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the harumaki hot with dipping sauce of your choice, such as soy sauce or sweet chili sauce.
