Prepare the Filling
In a large bowl, combine the ground pork, ground chicken, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until well combined.

Fill the Gyoza
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water, fold the wrapper in half, and pinch to seal. You can pleat the edges for a decorative finish. Repeat until all filling is used.

Pan Fry the Gyoza
Heat vegetable oil in a large skillet over medium heat. Place the gyoza in the skillet, making sure they are not touching. Fry for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Carefully pour in the water and cover the skillet with a lid. Steam the gyoza for about 5-7 minutes until the water has evaporated and the gyoza are cooked through.

Serve
Remove the gyoza from the skillet and serve hot with soy sauce or your favorite dipping sauce.
