    Roasting the Vegetables

    Preheat your oven to 400°F (200°C). Cut the red bell peppers and Roma tomatoes in half. Place them cut-side down on a baking sheet. Roast in the oven for about 20 minutes, until the skins are blistered and the tomatoes are soft.

    Preparing the Jalapeño

    While the vegetables are roasting, remove the seeds and stems from the jalapeño. Chop it finely and set aside.

    Blending the Ingredients

    Once the vegetables are done roasting, allow them to cool slightly. Then, peel off the skins from the red bell peppers. In a blender or food processor, combine the roasted bell peppers, roasted Roma tomatoes, chopped jalapeño, garlic cloves, red wine vinegar, sea salt, and cayenne pepper.

    Blending to Desired Consistency

    Blend the mixture until smooth. Taste and adjust seasoning if needed, adding more salt or cayenne pepper to your preference.

    Storing the Harissa

    Transfer the spicy harissa to a clean jar. Store in the refrigerator for up to a week or freeze for longer storage.
