Prepare the Chicken Breast

Preheat your oven to 400°F (200°C). Rub the chicken breasts with 2 tbsp olive oil, salt, pepper, and rosemary. Place on a baking sheet and roast for 25-30 minutes until fully cooked.

Cook the Grass-Fed Steak

Season the steak with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest before slicing.

Char the Broccoli

In a bowl, toss the broccoli with 1 tbsp olive oil, minced garlic, salt, and pepper. Heat a grill pan over medium-high heat and char the broccoli for about 5-7 minutes, turning occasionally. Squeeze fresh lemon juice over it before serving.

Bake the Sweet Potatoes

While the chicken is roasting, peel and chop the sweet potatoes into cubes. Toss with 1 tbsp olive oil, cinnamon, salt, and pepper. Spread on a baking sheet and bake for 25-30 minutes alongside the chicken until tender.

Cook the Brown Rice

In a pot, combine 1 cup of brown rice with 2 cups of water and a pinch of salt. Bring to boil, then reduce heat, cover, and simmer for 40-45 minutes, or until the rice is cooked. Fluff with a fork and stir in chopped parsley.

Make the Garlic Aioli (un)dressing

In a bowl, mix together mayonnaise, minced garlic, soy sauce, and a squeeze of lemon juice. Adjust seasoning to taste.
