Preparation Instructions
1. Prepare the Carrots
Preheat your oven to 400°F (200°C). Peel the carrots and cut them into uniform sticks or rounds.
2. Season the Carrots
In a large bowl, combine the avocado oil, coconut oil, coriander, and sea salt. Toss the carrot sticks in the mixture until well coated.
3. Roast the Carrots
Spread the carrots in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, turning halfway through.
4. Prepare the Topping
While the carrots are roasting, combine rolled oats, pistachios, pumpkin seeds, coconut flakes, light brown sugar, EVOO, and maple syrup in a bowl. Mix until everything is well coated.
5. Add Topping to Carrots
After the carrots are done roasting, remove them from the oven and sprinkle the topping mixture evenly over the carrots. Return to the oven for an additional 5-10 minutes until the topping is golden brown.
6. Finish and Serve
Once done, remove from the oven, sprinkle with dill and dried cherries. Serve warm as a delicious side dish.
