Marinate the Chicken
In a large bowl, combine the buttermilk and cajun seasoning. Submerge the chicken thighs in the mixture and marinate for at least 2 hours, preferably overnight in the refrigerator.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, salt, and black pepper.

Fry the Chicken
Heat the oil in a deep skillet or fryer to 350°F (175°C). Remove the chicken from the buttermilk marinade and let any excess drip off. Dredge each piece in the flour mixture, shaking off the excess. Carefully place the chicken in the hot oil and fry until golden brown and cooked through, about 7-10 minutes per side. Remove and drain on paper towels.

Prepare the House Slaw
Mix together shredded cabbage, carrots, a dash of vinegar, and a pinch of salt to create a fresh slaw. Adjust seasoning to taste.

Assemble the Dish
Place the fried chicken on a serving plate, top with the house slaw, and drizzle generously with the signature Mullet's made Dirté sauce.
