Preparation
Prepare the chicken
Cut the chicken breast fillets into strips, about 1 inch wide.
Make the batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper.
Mix the batter
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Heat the oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the chicken
Dip each chicken strip into the batter, allowing the excess to drip off. Carefully place them into the hot oil, frying in batches to avoid overcrowding.
Cook until golden
Fry the chicken tenders for about 4-6 minutes, or until they are golden brown and cooked through. Use a slotted spoon to remove them and drain on paper towels.
Serve
Serve the chicken tenders naked with sauce on the side or toss them in Merman or Dirté sauce before serving.
