Prepare the Fish
Cut the grouper or mahi mahi fillets into bite-sized nuggets.

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Nuggets
Dip each fish nugget into the batter, allowing excess to drip off. Carefully place the nuggets into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 3-4 minutes per batch.

Drain and Serve
Remove the fried nuggets with a slotted spoon and drain on paper towels. Serve hot with lemon wedges and house-made Tartar or Dirté sauce.
