Method
Preparing the Tonkatsu
Prepare the Pork
Season the pork cutlets with salt and black pepper on both sides. Dredge each cutlet in flour, shaking off the excess, then dip in beaten eggs, and finally coat with panko breadcrumbs.
Fry the Cutlets
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded cutlets for about 4-5 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Making the Sauces
Prepare Honey Miso Sauce
In a small bowl, whisk together miso paste, honey, soy sauce, and rice vinegar until smooth.
Prepare Spicy Mayo
In another bowl, mix mayonnaise, sriracha, and lime juice until well combined.
Making the Coleslaw
Combine Ingredients
In a large bowl, combine shredded cabbage, carrot, green onions, and cilantro. In a separate bowl, whisk together sesame oil, rice vinegar, sugar, and salt, then pour over the cabbage mixture and toss well.
Serving
Plate the Dish
Slice the tonkatsu and serve with honey miso sauce drizzled on top. Add a side of Asian coleslaw, spicy mayo, chopped peanuts, and pickles.
