Preparing the Ribs

Season the Ribs

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this mixture generously over the pork ribs.

Preheat the Smoker

Preheat your smoker to 225°F (107°C) using your preferred wood chips for smoking, such as hickory or applewood.

Smoke the Ribs

Place the seasoned ribs in the smoker and smoke for about 4-5 hours, or until the ribs reach an internal temperature of 190°F (88°C) and are tender.

Making the Asian BBQ Sauce

Combine Ingredients

In a medium saucepan, combine the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, sriracha sauce, and grated ginger. Stir well.

Simmer the Sauce

Bring the mixture to a simmer over medium heat. Reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally, until slightly thickened.

Glazing the Ribs

Glaze the Ribs

During the last 30 minutes of smoking, brush the Asian BBQ sauce over the ribs every 10 minutes to build up a nice glaze.

Rest and Serve

Once done, remove the ribs from the smoker, let them rest for 10 minutes, then slice and serve with any remaining sauce.
